Hey Chris. Well as far as wiring diagrams. Ted has a load of them. To be honest wiring is still something I strugle with. Look at a couple YouTube videos for soldering tutorials. I would go with a single coil. They are simpler easier to wire up. You really dont even have to have volume and tone control. You can just hook up single coil directly to input jack. Might make it easier and take some headache out of it. He can then deal with tone and volume using just the amp. If its for stage I would leave piezos out of it. Make sure you ground properly. I hope this helps.
